Buah Keluak Nyonya Paste

Unique to Peranakan culture, this dish uses keluak, an Indonesian black nut, which is poisonous. Only through a special preparation, can this ingredient be used to create this beautiful dish such as Ayam Buah Keluak. This dish has strong importance and it is served in special occasions like weddings and birthdays.

Nyonya Ayam Buah Keluak (Approx 40mins) Serves 2 – 3
  1. Fry paste till fragrant.
  2. Add 500g chicken and stir fry.
  3. Add 250ml water and bring to boil. Cover and simmer over low heat for 30mins till ready.
Cooking tips
  • Add a little water should the sauce dries up during cooking.
  • If you prefer a thicker sauce, remove cooked meat and boil down the sauce.
娘惹黑果鸡 (约 40分钟) 2 – 3 人份
  1. 将酱料炒香。
  2. 加入500克的鸡肉翻炒。
  3.  倒入250毫升的水,然后煮沸。盖锅,用慢火焖煮30分钟至煮熟。

  • 如果酱汁在烹饪中变干,请添加些许的水。
  • 如果您喜欢较浓郁的酱汁,请取出煮熟的肉,然后将酱汁焖煮至收汁。
